Healthy Breakfast-on-the-Go

It's time for breakfast and you're headed out the door? Of course, we would never think to skip breakfast, right. What do you do?  I'm a breakfast-on-the-go person 5 days a week. Good morning and happy fall! Can you feel the crisp fresh air especially in the morning and evening? It’s such a refreshing delight.

It’s time for breakfast and you’re headed out the door? Of course, we would never think to skip breakfast, right. What do you do?

I’m a breakfast-on-the-go person 5 days a week. Maybe it’s a smoothie on my way to work or overnight oars in a jar that I enjoy in my office. Or, it’s a grab and go homemade granola bar. Add baked oatmeal and you have my favorite and convenient breakfast choices Monday through Friday.

Nourishing Nut & Seed Bars

Delicious, nutritious and easy to make protein granola bars are perfect for breakfast-on-the-go, packing a school lunch or afternoon snack. You’re not just getting protein from these bars. You're also getting nutrition of the all the other natural ingredients. Gluten Free, Dairy Free, Vegan

Ingredients

  • 3 tablespoons ground flax
  • 3/4 cup almond milk
  • 2 cups gluten free oats
  • 1/4 cup sunflower seeds
  • 1/4 cup pepitas
  • 1/4 cup chopped walnuts
  • 2 tablespoons sunflower seeds
  • 1/4 cup cranberries
  • 1/4 cup golden raisins
  • 1/4 cup dark chocolate chips (I used dairy free Enjoy Life Mini Chips)
  • 1/2 cup vanilla protein powder (I used Skoop B-Strong)
  • 2-3 tablespoons pure maple syrup
  • 3/4 teaspoon salt
  • 1/4 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line an 8x8 baking dish with parchment paper.
  3. In a small bowl, combine the ground flax with the milk and set aside.
  4. In a large bowl, combine the remaining ingredients and mix well.
  5. Add the flax mixture to the dry ingredients and stir until well combined.
  6. Press the mixture evenly into the baking dish.
  7. Bake for about 12 minutes or until the top starts to brown.
  8. Let cool completely before cutting.

Notes

Make a double batch and freeze. After baking, allow the bars to thoroughly cool. Lay out in a single layer on a cookie sheet and put in the freezer until frozen. After frozen stack with a square of parchment paper in between each bar. Store in a freezer container or bag.
